Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant.
Cooking
  1. Add the pasta, vegetable broth, cherry tomatoes, and a pinch of salt and pepper.
  2. Bring the mixture to a boil, then reduce heat and simmer for about 10-12 minutes or until pasta is cooked through.
  3. Stir in the fresh spinach until wilted.
