Ingredients
  

Base Ingredients
  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons Italian seasoning
Tomato Base
  • 1 can (15-ounce) tomato sauce
  • 1 can (14.5-ounce) diced tomatoes, undrained
  • 4 cups chicken or beef broth
Noodles and Cheese
  • 8 pieces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • to taste Fresh basil for garnish optional

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the ground meat and cook until browned, breaking it apart as it cooks.
  3. Toss in the chopped onion and minced garlic, cooking until the onion becomes translucent.
  4. Sprinkle in the salt, pepper, and Italian seasoning, giving everything a good stir.
  5. Pour in the tomato sauce and diced tomatoes, stirring to combine with the meat mixture.
  6. Slowly add the broth and bring the mixture to a boil.
Cooking
  1. Drop the broken lasagna noodles into the pot. Reduce the heat and let it simmer until the noodles are tender, about 20 minutes.
  2. In a separate bowl, mix together the ricotta, mozzarella, and Parmesan cheeses.
  3. Once the noodles are cooked, ladle the hot soup into bowls. Dollop a generous spoonful of the cheese mixture into each bowl.
  4. Top with a sprinkle of fresh basil if desired and serve warm.

Notes

You can serve One-Pot Lasagna Soup hot, right after cooking. Works well as a standalone dish or with garlic bread or a fresh salad. For a fun twist, let everyone add their own cheese topping and fresh basil.
