  • 2 cups whole milk
  • 1.5 cups water or broth Using broth adds more flavor.
  • 8 ounces pasta of your choice
  • 8-10 ounces broccoli, finely chopped
  • 2 cups shredded extra sharp cheddar cheese Adjust according to taste.
  • 1/4 cup plain Greek-style yogurt
  • 1 tbsp butter or ghee Optional.

Method
 

Cooking
  1. Start by bringing the whole milk and water or broth to a boil in a large pot.
  2. Once boiling, add your choice of pasta and reduce the heat to a simmer. Cook for about 10 minutes.
  3. Next, stir in the finely chopped broccoli and continue to cook for an additional 2-3 minutes, until both the pasta and broccoli are cooked to your liking.
  4. Remove the pot from heat and stir in the cheddar cheese, Greek yogurt, and butter or ghee (if using) until the cheese has completely melted.
  5. Serve warm and enjoy your delicious, healthy meal!

Notes

To store leftovers, keep in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of milk to loosen.
