- In a large pot, heat olive oil over medium heat.
- Add diced onion, red bell pepper, and garlic. Sauté until soft.
- Add sliced andouille sausage and cook until browned.
- Stir in Cajun seasoning, diced tomatoes, and low sodium broth. Bring to a boil.
- Add pasta and cook until al dente, stirring occasionally.
- Reduce heat, stir in heavy cream and Parmesan cheese.
- Simmer uncovered for a few minutes until the sauce thickens. For a thicker sauce, continue to simmer uncovered for longer.
- Serve warm, topped with extra Parmesan cheese and a sprinkle of parsley.
Notes
