  • 1 lb smoked sausage, sliced You can also use Italian sausage or any sausage of your choice.
  • 1 lb baby potatoes, halved Cut into even halves for even cooking.
  • 1 lb green beans, trimmed Frozen green beans can also be used directly.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper Adjust seasonings according to preference.
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the sliced sausage, halved potatoes, and trimmed green beans.
  3. Drizzle with olive oil and sprinkle with garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
  4. Spread the mixture in a single layer on a baking sheet.
Cooking
  1. Roast in the preheated oven for 25-30 minutes, or until the potatoes are tender and the sausage is heated through.
  2. Garnish with fresh parsley before serving.

Notes

Serve hot right from the oven; it pairs well with a simple salad or crusty bread. Leftovers can be enjoyed cold for lunch the next day. Store leftovers in an airtight container in the refrigerator for up to 3 days.
