Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, garlic, thyme, salt, and pepper.
Cooking
  1. Heat olive oil in a large oven-safe skillet over medium-high heat.
  2. Season chicken with salt and pepper and brown on both sides in the skillet.
  3. Add the balsamic mixture and bring to a simmer.
  4. Arrange your choice of vegetables around the chicken in the skillet.
  5. Transfer the skillet to the oven and bake for 20-25 minutes, until the chicken is cooked through.
  6. Serve warm, drizzling extra sauce over the top.

Notes

For extra flavor, marinate the chicken in the balsamic mixture for a few hours before cooking. Feel free to mix and match vegetables based on what you have on hand. Use a meat thermometer to ensure that the chicken reaches an internal temperature of 165°F (75°C) for safety.
