Preparation
- Preheat oven to 350 degrees F and lightly grease a 2-quart casserole dish.
- Coarsely chop the cabbage.
- Melt 8 tablespoons of butter in a large nonstick pan.
- Add cabbage and onion and cook for 8 to 10 minutes, stirring frequently, until partially cooked down. Season to taste with salt and pepper.
- Transfer the cabbage mixture to the prepared baking dish.
- In a small bowl, stir together the soup and mayonnaise, then spread the mixture over the cabbage.
- In a separate bowl, stir together the melted butter, cheese, and crushed cracker crumbs, then sprinkle over the casserole.
Baking
- Bake for 30 minutes or until the topping is browned.
Notes
Serve the casserole hot from the oven with a green salad or crusty bread. Adjust cheese and cracker amounts to preference. Can add cooked ground beef or sausage for protein.
