Old-Fashioned Cabbage Casserole

Ingredients
  

Cabbage Base
  • 1 small head green cabbage
  • 1 medium Vidalia onion, chopped
  • 8 tablespoons butter
  • Salt to taste
  • Pepper to taste
Creamy Mixture
  • 1 10-ounce can condensed cream of chicken or cream of mushroom soup
  • 1/3 cup mayonnaise
Topping
  • 3 tablespoons melted butter
  • 1 cup shredded sharp cheddar cheese
  • 1 sleeve Ritz crackers, coarsely crushed

Method
 

Preparation
  1. Preheat oven to 350 degrees F and lightly grease a 2-quart casserole dish.
  2. Coarsely chop the cabbage.
  3. Melt 8 tablespoons of butter in a large nonstick pan.
  4. Add cabbage and onion and cook for 8 to 10 minutes, stirring frequently, until partially cooked down. Season to taste with salt and pepper.
  5. Transfer the cabbage mixture to the prepared baking dish.
  6. In a small bowl, stir together the soup and mayonnaise, then spread the mixture over the cabbage.
  7. In a separate bowl, stir together the melted butter, cheese, and crushed cracker crumbs, then sprinkle over the casserole.
Baking
  1. Bake for 30 minutes or until the topping is browned.

Notes

Serve the casserole hot from the oven with a green salad or crusty bread. Adjust cheese and cracker amounts to preference. Can add cooked ground beef or sausage for protein.
