  • 2 cups old-fashioned oats
  • 1.5 cups milk (or almond milk for dairy-free)
  • 1 large apple, diced Any variety, Granny Smith and Honeycrisp work well together
  • 2 large eggs Substitute with flax eggs for a vegan version
  • 0.25 cup maple syrup or honey Increase to taste for a sweeter bake
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.25 cup chopped walnuts or pecans (optional) Can be substituted with seeds or omitted

Method
 

Preheat & Prep
  1. Preheat your oven to 350°F (175°C). Grease a baking dish with butter or non-stick spray.
Mix the Ingredients
  1. In a large bowl, whisk together the eggs, milk, maple syrup, and vanilla extract until well combined.
  2. Stir in the oats, baking powder, cinnamon, and salt until everything is mixed.
  3. Fold in the diced apples and nuts (if using).
Bake
  1. Pour the mixture into the greased baking dish and spread it evenly.
  2. Bake in the preheated oven for 30-35 minutes, or until the top is golden and the center is set.
Serve
  1. Let the dish cool for about 5 minutes before serving. Enjoy it warm, or refrigerate and reheat for a quick breakfast later.

Notes

For longer storage, consider freezing individual portions. Thaw in the fridge overnight and reheat before serving. Add raisins or dried cranberries for extra sweetness.
