Preheat & Prep

- In a large bowl, whisk together the eggs, milk, maple syrup, and vanilla extract until well combined.
- Stir in the oats, baking powder, cinnamon, and salt until everything is mixed.
- Fold in the diced apples and nuts (if using).
Bake
- Pour the mixture into the greased baking dish and spread it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and the center is set.

Notes
For longer storage, consider freezing individual portions. Thaw in the fridge overnight and reheat before serving. Add raisins or dried cranberries for extra sweetness.
