Ingredients
  

Meatball Ingredients
  • 8 oz ground turkey Use lean ground turkey for best results.
  • 3 cloves garlic, minced
  • 2 tbsp basil, chopped Fresh basil enhances the flavor.
  • 2 tbsp zucchini, shredded Can substitute with shredded carrots or spinach.
  • 2 tbsp mozzarella cheese, shredded Optional for added flavor and moisture.
  • 1 tsp green pesto Adjust quantity for stronger flavor.
  • Salt and pepper to taste

Method
 

Preparation
  1. Mix all ingredients in a bowl until they are well combined.
  2. Form walnut-sized meatballs with your hands.
Cooking
  1. Cook the meatballs in a nonstick pan with a little bit of oil. Cover with a lid and cook for 4-5 minutes.
  2. Flip the meatballs to cook the other side. Cook until they are done to your liking.
Serving
  1. Serve with a side of salad, cauliflower rice, or zoodles for a complete high-protein, low-carb dinner.

Notes

For extra moisture, add grated carrot or bell pepper to the mixture. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage.
