- In a large microwave-safe bowl, melt the butterscotch chips, chocolate chips, and peanut butter together. Do this in 30-second intervals, stirring after each until smooth.
- Gently fold in the chow mein noodles and shredded coconut (if using) until everything is evenly coated.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Refrigerate for 30 minutes or until firm.
Notes
For an extra touch, drizzle some melted chocolate over the top before they set in the fridge. Store in an airtight container at room temperature for 5–7 days.
