- In a medium bowl, mix the crushed Oreos with melted butter until well combined. Press the mixture firmly into the bottom of a 9x9-inch baking dish. Refrigerate for about 10 minutes to set.
- In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy, about 2-3 minutes.
- In a separate bowl, beat the chilled whipping cream until stiff peaks form, approximately 3-5 minutes.
- Gently fold the whipped cream into the cream cheese mixture until just combined. If desired, stir in mini chocolate chips.
- Pour the cheesecake filling on top of the Oreo crust and top with sprinkles.
- Cover with plastic wrap and refrigerate for at least 4 hours or until firm.
- Slice into bars and serve chilled.
Notes
For best texture and flavor, avoid reheating. Leftovers can be stored in an airtight container and refrigerated for up to 5 days or frozen for up to 3 months.
