  1. Start by grabbing your trusty food processor. Add the cottage cheese first.
  2. Next, add the rolled oats, cocoa powder, honey or maple syrup, nut butter, and vanilla extract.
  3. Blend everything until it’s well combined and smooth, stopping halfway to scrape down the sides if needed.
  4. Gently fold in the chocolate chips with a spatula.
  5. Scoop out the mixture and roll it into bite-sized balls.
  6. Place the bites on a lined baking sheet and chill in the fridge for about 30 minutes.

Notes

Use full-fat cottage cheese for richer flavor. Double the recipe to stash some in the freezer. Experiment with flavor variations like coconut flakes or spices.
