  • 1 cup tortilla chips, broken Break into pieces for texture variety.
  • 1 can (15 oz) black beans, drained and rinsed Adds protein and fiber.
  • 1 cup salsa Use your favorite brand or homemade.
  • 1 cup corn, frozen or canned Sweet and colorful, adds flavor.
  • 1 cup shredded cheese (cheddar or Mexican blend) Essential for gooey goodness.
  • 1/2 cup diced tomatoes Freshness overload.
  • 1/4 cup sliced jalapeños (optional) Adds a kick.
  • to taste sour cream for topping (optional) Balances the flavors.
  • to taste green onions for topping (optional) Provides a fresh crunch.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, black beans, salsa, corn, diced tomatoes, and taco seasoning. Mix well.
  3. In a greased baking dish, layer half of the tortilla chips on the bottom, then half of the chicken mixture, followed by half of the shredded cheese. Repeat this process, finishing with cheese on top.
  4. Bake in the oven for 20-25 minutes until the cheese is melted and bubbly.
  5. If desired, sprinkle sliced jalapeños on top before serving. Provide sour cream and green onions for guests to customize.

Notes

Use leftover or rotisserie chicken for a quicker prep. The casserole can be prepared a day in advance and stored in the fridge before baking.
