  • 8 oz lo mein noodles Or substitute with spaghetti or rice noodles.
  • 1 lb lean ground beef (90/10 or 93/7)
  • 1/2 cup beef broth Low sodium preferred.
  • 1/3 cup low sodium soy sauce Use gluten-free soy sauce if needed.
  • 1/4 cup brown sugar Adjust to taste.
  • 2 tablespoons hoisin sauce
  • 1 tablespoon cornstarch
  • 5 cloves minced garlic Use fresh for best flavor.
  • 2 teaspoons minced ginger Use fresh for best flavor.
  • 1/2 teaspoon black pepper
  • 1 tablespoon high-heat cooking oil (like avocado oil)
  • 3 thinly sliced green onions (whites and greens separated)

Method
 

Preparation
  1. Boil the noodles according to package instructions, reducing cooking time by 1-2 minutes to leave them just shy of al dente. Drain and set aside.
  2. In a bowl, mix beef broth, soy sauce, brown sugar, hoisin sauce, black pepper, and cornstarch to prepare the sauce. Add 75% of the ginger and garlic, keeping the rest for later.
Cooking
  1. Preheat a griddle or skillet over medium heat.
  2. Cook the ground beef in chunks on the griddle for about 2-3 minutes for a nice char. When halfway cooked, add the whites of the green onions and continue cooking.
  3. Move the beef to the side or transfer to a bowl. Add cooking oil and the remaining garlic and ginger to the griddle. Toast for 1 minute.
  4. Add the drained noodles to the griddle and cook for another 1-2 minutes.
  5. Combine the cooked beef and noodles, then pour in the sauce. Toss everything together and sauté for an additional 2-3 minutes until the sauce thickens.
  6. Serve with the green onion tops sprinkled on top.

Notes

Serve hot with steamed vegetables or a simple salad. Add sesame seeds or crushed peanuts for extra flavor and texture. For storage, let cool completely before placing in an airtight container in the fridge for up to 3 days.
