Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

- In another bowl, whisk together the sugar, oil, buttermilk, eggs, food coloring, and vanilla until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, mix the baking soda and vinegar. Add to the cake batter and stir quickly.
Baking
- Divide the batter between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Frosting
- Frost with cream cheese frosting once cooled.
