For the glaze
  • 1 cup powdered sugar
  • 2 tablespoons orange juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, combine the flour, baking soda, baking powder, and salt. Whisk to ensure everything is nicely combined and airy.
  3. In a separate bowl, cream the softened butter and sugar together until it’s light and fluffy.
  4. Add in the eggs, orange juice, and zest. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture. Fold in the cranberries gently until evenly distributed.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  3. While it cools, mix the powdered sugar with orange juice and zest for the glaze.
  4. Drizzle the glaze over the cooled bread before serving.
