  • 3 pieces ripe bananas The riper, the better
  • 1/3 cup melted butter Use unsalted butter for refined flavor
  • 1 teaspoon baking soda Activated by wet ingredients
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute with whole wheat flour but texture will change
  • 1/2 cup chocolate chips

Method
 

Preparation and Mixing
  1. Preheat the oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, use a fork to mash the ripe bananas until smooth.
  3. Stir the melted butter into the mashed bananas until well-combined and creamy.
  4. Mix in the baking soda and a pinch of salt.
  5. Stir in the sugar, followed by the egg and vanilla extract, mixing until cohesive.
  6. Mix in the flour gradually until just incorporated.
  7. Fold in the chocolate chips gently.
Baking
  1. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  2. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days; refrigerate for up to a week or freeze for longer storage.
