  • 3 ripe bananas, mashed Use very ripe bananas for best flavor
  • 1/2 cup sour cream Can substitute with yogurt for a different taste
  • 1/3 cup melted butter
  • 1 cup sugar Can slightly increase for sweeter bread
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped nuts (optional) Customize with walnuts or pecans

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a mixing bowl, combine the mashed bananas and sour cream.
  3. Stir in the melted butter.
  4. Add the sugar, beaten egg, and vanilla extract; mix well.
  5. Sprinkle the baking soda and salt over the mixture; mix in.
  6. Add the flour and stir until just incorporated. Fold in the nuts, if using.
  7. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Moist Banana Bread can be served warm or at room temperature. It pairs well with coffee or tea, and for a twist, try adding a drizzle of honey or maple syrup. Store wrapped tightly in plastic wrap or aluminum foil at room temperature for up to 3 days, or freeze for up to 3 months.
