Ingredients

Brownie Base
  • 1 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
Pudding and Topping
  • 1 package instant chocolate pudding mix
  • 2 cups milk
  • 1 cup whipped topping
  • to taste Chocolate shavings or additional whipped topping for garnish (optional)

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix together cocoa powder, sugar, flour, eggs, melted butter, and vanilla until well combined to make the brownie base.
  3. Pour the mixture into the prepared baking dish and bake for 20-25 minutes, or until a toothpick comes out clean. Let it cool completely.
Assembly
  1. Once cooled, prepare the chocolate pudding according to the package instructions using 2 cups of milk. Spread the pudding evenly over the brownie base.
  2. Top the pudding layer with whipped topping and spread it evenly.
  3. Garnish with chocolate shavings or additional whipped topping if desired.
  4. Refrigerate for at least 2 hours before serving to allow the layers to set.

Notes

Make sure the brownie base is completely cool before adding the pudding layer to avoid melting the pudding. You can use homemade whipped cream instead of store-bought whipped topping for an extra touch of homemade goodness. For added chocolate flavor, consider using dark chocolate cocoa powder or adding chocolate chips to the brownie mixture. This pie can be prepared a day in advance and keeps well if stored properly.
