Preparation
- Preheat the oven to 350 degrees F.
- Mix together the brownie batter according to the directions on the box. Pour the batter into a greased 9 x 13 inch pan. For easy removal, line the pan with parchment paper.
- In a bowl, mix together the marshmallow cream, 1/4 tsp of mint extract, and 4-5 drops of green food coloring.
- Drop 6-8 large tablespoons of the marshmallow mixture on top of the brownie batter. Use a knife to gently swirl the marshmallow mixture into the brownie batter, making an S shape.
Baking
- Bake the brownies for 25 minutes or until a toothpick comes out clean. Allow them to cool completely.
Making the Frosting
- To make the buttercream, combine the butter, powdered sugar, and milk in a bowl. Beat with a hand mixer or a stand mixer until the mixture is smooth and creamy.
- Melt the mint chips in the microwave. Add the melted chips into the buttercream, along with 5-6 drops of green food coloring and 1/2 tsp of mint extract. Mix until well combined.
Frosting and Topping
- Frost the cooled brownies with the mint buttercream.
- Break or cut up the chocolate sandwich cookies and sprinkle them over the top of the frosting.
Notes
For extra mint flavor, feel free to add more mint extract to the frosting. Make sure to cool the brownies completely before frosting to avoid melting the buttercream. Use a sharp knife to cut the brownies for clean edges.
