Preparation
- Preheat your oven to 350 degrees F and grease a 9 x 13 inch pan with flour.
- Melt the butter in a large microwave-safe bowl.
- Add the oil, granulated sugar, eggs, vanilla, and mint extract. Whisk until well combined.
- Beat in the cocoa powder, flour, salt, and baking powder until smooth.
- Pour half of the brownie batter into the prepared pan.
- Place 24 whole Mint Oreos on top of the batter, then spread the remaining batter over the Oreos.
Baking
- Bake for 25-30 minutes, or until a toothpick inserted comes out with a few crumbs. Let the brownies cool completely.
Frosting
- For the frosting, beat softened butter in a stand mixer for 1-2 minutes.
- Gradually add the powdered sugar.
- Mix in enough milk or heavy cream to make it spreadable, along with the mint extract to taste.
- Spread the frosting over the cooled brownies.
Topping and Drizzle
- Crush the remaining Oreos gently and sprinkle them on top of the frosted brownies.
- For the drizzle, melt butter in a medium bowl, then stir in cocoa powder, corn syrup, powdered sugar, and milk or cream until smooth.
- If needed, microwave the mixture in 20-second intervals and stir until smooth.
- Drizzle over the frosted brownies, using a ziploc bag with a cut corner for more control.
- Let everything cool down and cut the brownies into bars.
Notes
Make sure to measure your ingredients accurately for the best results. Allow the brownies to cool completely before adding frosting to prevent it from melting. You can adjust the amount of mint extract in the frosting based on your preference for mint flavor. For a fun presentation, use colorful sprinkles in addition to the crushed Oreos! Store in an airtight container for 3-5 days.
