  • 1 cup raw cashews Make sure the cashews are raw for the best flavor and nutrition.
  • 10 pieces pitted Medjool Dates Use fresh Medjool dates for natural sweetness and a sticky texture.
  • 1/4 cup cacao powder Roll the balls in cacao powder or shredded coconut for extra texture and flavor.
  • 2 tablespoons ground flaxseeds Adds a nice nutritional boost.
  • 1 teaspoon peppermint extract Add more for a stronger mint flavor, but do it gradually.
  • 1 pinch sea salt Balances the sweetness.

Method
 

Preparation
  1. Add all of the ingredients to a food processor.
  2. Process on high until the mixture starts to stick together.
  3. Using a medium cookie scoop, scoop a ball and roll it in between your hands.
  4. Place the rolled ball on a plate.
  5. Continue this process until you have used up all the dough.

Notes

Store in a sealed bag or container in the fridge for up to 2 weeks, or freeze for up to 3 months. Let them sit at room temperature for a few minutes before eating if taken out from the freezer.
