Ingredients
  

For the Potato Skins
  • 16 small potatoes 16 small potatoes Use small potatoes for bite-sized skins.
  • 1 cup 1 cup shredded cheddar cheese You can experiment with different cheeses.
  • 1/2 cup 1/2 cup sour cream
  • 1/4 cup 1/4 cup green onions, chopped
  • 4 slices 4 slices bacon, cooked and crumbled Can skip to make it vegetarian.
  • Olive oil Rub the potatoes with olive oil.
  • Salt and pepper Season the potato skins well for added flavor.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and poke holes in them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Place them on a baking sheet and bake for about 25-30 minutes or until tender.
  5. Remove from the oven and let cool slightly.
  6. Cut each potato in half and scoop out a bit of the flesh.
  7. Fill each potato half with shredded cheddar cheese and crumbled bacon.
  8. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted.
  9. Top with sour cream and chopped green onions before serving.

Notes

Serve while hot, with additional toppings like salsa, jalapeños, or guacamole. For storage, let cool completely and keep in an airtight container in the refrigerator for about 3 days.
