Preparation
- Peel, core, and slice the apples into thin slices. Toss them in a bowl with sugar, cinnamon, nutmeg, and lemon juice. Let them marinate.
Preparing the Crust
- Roll out the store-bought pastry on a floured surface to about 1/8 inch thick, or prepare your homemade crust ensuring it’s cool before rolling out.
- Cut the dough into circles that fit into a muffin tin and line each cup.
Filling the Pies
- Spoon the apple mixture generously into each crust-lined cup, packing gently.
Adding the Lids
- Using leftover dough, create small circles or shapes for the tops and place them on the filled cups.
- Brush with melted butter and sprinkle a little sugar on top.
Baking
- Preheat the oven to 375°F (190°C) and bake for about 20-25 minutes until golden brown.
Cooling and Serving
- Let the mini pies cool for a few minutes before serving warm, optionally with a scoop of vanilla ice cream.
Notes
For best results, choose a mix of sweet and tart apples. Optional: Pre-bake the crust for a crisper base.
