Ingredients
  

For the dip
  • 4 oz thick cut bacon (about 4 slices), cut into 1/4 inch pieces
  • 2 scallions, white and green parts separated, thinly sliced
  • 4 oz cream cheese, softened
  • 3/4 cup shredded cheddar
  • 1/4 cup sliced almonds
  • 2 Tbsp mayonnaise
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • Crackers, for serving

Method
 

Cooking the Bacon
  1. In a cold, large, ovenproof or cast iron skillet, arrange the bacon in a single layer.
  2. Cook over medium heat, stirring occasionally, until crispy, about 10 minutes.
  3. Transfer the bacon to a paper towel lined plate to drain.
Mixing the Dip
  1. In a serving bowl, mix the bacon, white scallion parts, cream cheese, cheddar, almonds, mayonnaise, salt, and pepper until combined.
  2. Top with green scallion parts.
Serving
  1. Serve cold or at room temperature with crackers alongside.

Notes

Ensure cream cheese is at room temperature for easier mixing. You can use smoked bacon for added flavor. To give it a crunch, add extra sliced almonds or chopped nuts. Experiment with the cheese by mixing cheddar and pepper jack for a kick. Store leftovers in an airtight container in the refrigerator for up to three days. Mix in a little mayonnaise if the dip thickens.
