Cooking the Bacon
- In a cold, large, ovenproof or cast iron skillet, arrange the bacon in a single layer.
- Cook over medium heat, stirring occasionally, until crispy, about 10 minutes.
- Transfer the bacon to a paper towel lined plate to drain.
Mixing the Dip
- In a serving bowl, mix the bacon, white scallion parts, cream cheese, cheddar, almonds, mayonnaise, salt, and pepper until combined.
- Top with green scallion parts.
Serving
- Serve cold or at room temperature with crackers alongside.
Notes
Ensure cream cheese is at room temperature for easier mixing. You can use smoked bacon for added flavor. To give it a crunch, add extra sliced almonds or chopped nuts. Experiment with the cheese by mixing cheddar and pepper jack for a kick. Store leftovers in an airtight container in the refrigerator for up to three days. Mix in a little mayonnaise if the dip thickens.
