  • 4.5 cups chopped cooked chicken
  • 4 oz cream cheese (room temperature)
  • 1 cup cottage cheese
  • 0.5 cup sour cream
  • 1 can unsalted cream of chicken soup (10.5 oz)
  • 0.25 tsp garlic powder
  • 0.25 tsp dried onion powder
  • 1 sleeve Ritz crackers (crushed)
  • 5 Tbsp butter (melted)

Method
 

Preparation
  1. Preheat the oven to 350ºF. Lightly spray a 9x9-inch baking dish with cooking spray and set aside.
  2. In a large bowl, combine the cooked chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Mix well until everything is combined.
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. In another bowl, combine the crushed Ritz crackers and melted butter. Mix until the crackers are well coated.
  5. Sprinkle the cracker mixture over the chicken mixture in the baking dish.
Baking
  1. Bake uncovered for 30 to 40 minutes, until the casserole is hot and bubbly.

Notes

For quicker preparation, use leftover rotisserie chicken. For added flavor, consider adding some shredded cheese or crushed red pepper flakes. Use low-fat dairy for a lighter dish. Can add vegetables like spinach, broccoli, or peas for variation.
