  • 3 cups cooked rotisserie chicken, shredded Use leftover chicken for convenience.
  • 1 cup sour cream
  • 1 cup cream of chicken soup Can substitute with cream of mushroom soup.
  • 1 cup shredded cheddar cheese Feel free to use a different cheese.
  • 1 cup cooked rice or pasta Choose based on preference.
  • 1/2 cup green onions, sliced
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
Topping Ingredients
  • 1 cup crushed Ritz crackers For topping.
  • 2 tablespoons melted butter For mixing with the crackers.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, sour cream, cream of chicken soup, cheddar cheese, cooked rice or pasta, green onions, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Pour the mixture into a greased 9×13 inch baking dish.
  4. In a separate bowl, combine crushed Ritz crackers and melted butter, then sprinkle evenly over the casserole.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
  2. Let it cool for a few minutes before serving.

Notes

Serve hot paired with a simple salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze tightly wrapped.
