Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
- In a medium bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Gradually mix in the flour and salt until combined. Press the dough evenly into the bottom of the prepared pan.
- Bake for 15-20 minutes, or until the edges are lightly golden.
Making the filling
- In another bowl, whisk together the granulated sugar, eggs, Meyer lemon juice, lemon zest, and baking powder until smooth.
- Pour the lemon mixture over the baked crust and return to the oven.
- Bake for an additional 20-25 minutes, or until the filling is set.
Serving
- Let it cool completely before cutting into squares.
- Dust with powdered sugar before serving.
