For the filling
  • 1 cup granulated sugar

  • 1/2 cup fresh Meyer lemon juice Fresh juice provides the best flavor; avoid bottled juice.
  • Zest of 1 Meyer lemon
  • 1/4 teaspoon baking powder
  • Powdered sugar for dusting Dust before serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. In a medium bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Gradually mix in the flour and salt until combined. Press the dough evenly into the bottom of the prepared pan.
  4. Bake for 15-20 minutes, or until the edges are lightly golden.
Making the filling
  1. In another bowl, whisk together the granulated sugar, eggs, Meyer lemon juice, lemon zest, and baking powder until smooth.
  2. Pour the lemon mixture over the baked crust and return to the oven.
  3. Bake for an additional 20-25 minutes, or until the filling is set.
Serving
  1. Let it cool completely before cutting into squares.
  2. Dust with powdered sugar before serving.

Notes
