Preparation
- Preheat your oven to 375°F and spray the inside of an 8×11½ inch baking pan with nonstick spray.
- If the chicken breasts are of uneven thickness, pound them to an even thickness of about ¾ to 1 inch using a meat pounder.
- Sprinkle the chicken breasts on both sides with 1 cup of grated Parmesan cheese and the freshly ground black pepper. Place them in the prepared baking dish.
- In a small bowl, whisk together the Caesar dressing and sour cream (if using). Pour this mixture over each chicken breast.
- Sprinkle the remaining ½ cup of grated Parmesan cheese on top.
Cooking
- Bake the chicken in the oven for 30 minutes, or until a meat thermometer inserted in the thickest part of one of the middle breasts reads 150°F.
- Turn the oven to broil and broil the chicken for an additional 2 to 4 minutes, or until the chicken turns golden brown. The final temperature should be 165°F when checked in the thickest part of one of the middle breasts.
Serving
- Remove the chicken from the oven and cover loosely with foil. Allow it to rest for 5 to 10 minutes before serving. If desired, garnish with chopped parsley.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 2 months. Serve warm, paired with a green salad, garlic bread, or roasted vegetables. For a complete meal, consider adding rice or pasta.
