Mediterranean Steak Bowls

Ingredients
  

Steak
  • 1 lb sirloin or flank steak or another tender cut
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp oregano
Bowl Ingredients
  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 red onion thinly sliced
  • 1/2 cup Kalamata olives halved
  • 1/2 cup feta cheese crumbled
  • 1/2 cup hummus
  • 1 lemon cut into wedges
  • 1/4 cup fresh parsley or mint chopped

Method
 

  1. Season the steak with salt, pepper, garlic powder, and oregano. Heat olive oil in a skillet over high heat. Sear the steak for 3-4 minutes per side until caramelized and cooked to desired doneness. Rest for 5 minutes, then slice thinly against the grain.
  2. Meanwhile, chop the cucumber, tomatoes, and red onion. Crumble the feta, halve the olives, and cut the lemon into wedges.
  3. Start assembling the bowls by layering quinoa or rice as the base. Top with vegetables, olives, feta, and hummus.
  4. Arrange slices of steak on top. Drizzle with olive oil, squeeze lemon over everything, and sprinkle with chopped herbs before serving.

Notes

Customize your bowl with your favorite grains, extra vegetables, or even swap steak for chicken, tofu, or chickpeas. Add a drizzle of harissa for a spicy kick or a spoonful of tzatziki for extra creaminess!
