- Meanwhile, chop the cucumber, tomatoes, and red onion. Crumble the feta, halve the olives, and cut the lemon into wedges.
- Start assembling the bowls by layering quinoa or rice as the base. Top with vegetables, olives, feta, and hummus.
- Arrange slices of steak on top. Drizzle with olive oil, squeeze lemon over everything, and sprinkle with chopped herbs before serving.
