Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine sliced zucchinis, chopped bell peppers, sliced onion, minced garlic, oregano, thyme, salt, pepper, and olive oil. Toss to coat evenly.
- Place chicken breasts on a sheet pan, arranging the vegetable mixture around them for optimal cooking.
Cooking
- Bake for 25-30 minutes, checking until chicken is cooked through (165°F/75°C) and vegetables are tender and slightly caramelized.
- In the last 5 minutes of baking, add halved cherry tomatoes atop chicken and vegetables.
- Optional: Sprinkle feta cheese before serving.
