  • 4 pieces boneless, skinless chicken breasts Ensure chicken is at room temperature before cooking.
  • 2 medium zucchinis, sliced
  • 1 piece red bell pepper, chopped
  • 1 piece yellow bell pepper, chopped
  • 1 piece onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano Fresh can be used if available.
  • 1 teaspoon dried thyme Fresh can be used if available.
  • to taste salt and pepper
  • 2 tablespoons olive oil Use to coat vegetables.
  • 1 cup cherry tomatoes, halved Add in last 5 minutes of baking.
  • Feta cheese for topping (optional) Sprinkle before serving for added flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine sliced zucchinis, chopped bell peppers, sliced onion, minced garlic, oregano, thyme, salt, pepper, and olive oil. Toss to coat evenly.
  3. Place chicken breasts on a sheet pan, arranging the vegetable mixture around them for optimal cooking.
Cooking
  1. Bake for 25-30 minutes, checking until chicken is cooked through (165°F/75°C) and vegetables are tender and slightly caramelized.
  2. In the last 5 minutes of baking, add halved cherry tomatoes atop chicken and vegetables.
  3. Optional: Sprinkle feta cheese before serving.

Notes

This recipe is versatile; feel free to substitute vegetables or protein as desired. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for 2-3 months.
