  • 1 block feta cheese preferably whole, not crumbled
  • 2-3 eggs
  • 1 cup cherry tomatoes halved
  • 1/4 cup kalamata olives pitted and halved
  • 1 clove garlic minced
  • 1/4 tsp red pepper flakes
  • 2 tbsp olive oil extra virgin
  • salt and pepper to taste
  • 1 tbsp fresh herbs parsley, oregano or dill, chopped

  • Oven-safe Skillet or Baking Dish

Method
 

  1. Preheat oven to 375°F (190°C). Prepare a small oven-safe skillet or baking dish.
  2. In the dish, combine cherry tomatoes, garlic, olives, olive oil, red pepper flakes, salt, and pepper. Mix gently. Nestle feta block in the center.
  3. Bake for 10 minutes until tomatoes blister and feta softens.
  4. Crack eggs around the feta. Return to oven and bake for another 5-7 minutes until egg whites are set but yolks remain soft.
  5. Garnish with fresh herbs and serve hot with bread or pita.

Notes

Use room-temperature eggs for best results. Add spinach or bell peppers for extra veg. Harissa adds a spicy twist!
