- Preheat oven to 375°F (190°C). Prepare a small oven-safe skillet or baking dish.
- In the dish, combine cherry tomatoes, garlic, olives, olive oil, red pepper flakes, salt, and pepper. Mix gently. Nestle feta block in the center.
- Bake for 10 minutes until tomatoes blister and feta softens.
- Crack eggs around the feta. Return to oven and bake for another 5-7 minutes until egg whites are set but yolks remain soft.
- Garnish with fresh herbs and serve hot with bread or pita.
Notes
Use room-temperature eggs for best results. Add spinach or bell peppers for extra veg. Harissa adds a spicy twist!
