A classic comfort food, this meatloaf is easy to make and perfect for family dinners. It can be prepared in advance and reheated as needed.

Ingredients
  

Meatloaf Ingredients
  • 2 lbs ground beef, 85% or 80% lean
  • 1 medium onion, finely chopped (about 1 cup)
  • 1 tsp olive oil for sautéing onions
  • 2 large eggs
  • 3 cloves garlic, minced
  • 2 Tbsp ketchup
  • 3 Tbsp fresh parsley, finely chopped
  • 3/4 cup Panko breadcrumbs (or gluten-free bread crumbs)
  • 1/3 cup milk
  • 1 tsp salt (or to taste)
  • 1 tsp Italian seasoning
  • 1/2 tsp ground black pepper
Sauce Ingredients
  • 3/4 cup ketchup for glaze
  • 1 1/2 tsp white vinegar
  • 2 Tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Method
 

Preparation
  1. Line a rimmed baking sheet with parchment paper or foil for easier cleanup, and preheat your oven to 350°F.
  2. In a medium skillet over medium heat, add 1 tsp of olive oil and the chopped onion. Sauté until softened and golden, about 5-7 minutes. Transfer the onions to a plate to cool.
  3. In a large bowl, combine all meatloaf ingredients. Mix until well combined, using your hands for the best results.
  4. Put the meat mixture on the prepared baking sheet. Shape it into a loaf about 8 inches long, 4 inches wide, and 3 inches tall.
Baking
  1. Bake uncovered for 40 minutes at 350°F.
  2. In a small bowl, mix together the sauce ingredients until combined.
  3. Spread the sauce over the meatloaf and return it to the oven. Bake for an additional 20 minutes or until the internal temperature reaches 160°F.
  4. Allow the meatloaf to rest for 10-15 minutes before slicing.

Notes

Serve warm with mashed potatoes and steamed vegetables. Leftovers are great in sandwiches. For variation, consider adding vegetables like bell peppers or carrots to the meat mixture or use a mix of meats for different flavors.
