Ingredients
  

Crust Ingredients
  • ½ cup unsalted butter, room temperature Make sure it's at room temperature for easy mixing.
  • ½ cup confectioners’ sugar Plus a generous amount for dusting.
  • ¼ tsp salt Consider adding an extra pinch for more flavor.
  • 1 cup all-purpose flour Avoid overmixing.
Filling Ingredients
  • 4 large egg yolks Separate from the whites.
  • 1 can (14 oz) sweetened condensed milk A homemade version can be made if desired.
  • cup fresh lemon juice About 2-3 lemons, adjust according to taste.

Method
 

Prepare the Crust
  1. In a mixing bowl, combine the butter, confectioners’ sugar, and salt. Blend with a fork, then use your fingers as the butter softens.
  2. Gradually add the flour, mixing until just combined, and the mixture holds together.
Press and Bake the Base
  1. Butter the bottom of your baking dish and line it with wax paper.
  2. Press the crust mixture into the dish evenly and prick with a fork. Bake in a preheated oven at 350°F for 15 to 18 minutes until golden.
Prepare the Filling
  1. In a bowl, whisk the egg yolks until thick and golden.
  2. Combine with sweetened condensed milk and lemon juice, whisking until smooth.
Bake Again
  1. Once crust is hot, pour the lemon filling over it and return to oven for about 25 minutes, until set but slightly jiggly.
Cool and Dust
  1. Allow to cool completely, then cut into squares.
  2. Dust with confectioners’ sugar before serving.

Notes

Store in an airtight container in the refrigerator for up to one week. For freezing, wrap squares individually and store in a container for up to 2-3 months.
