  • 4 cups Chicken Broth Opt for low-sodium to control saltiness.
  • 1 cup Heavy Cream Substitute with coconut milk for dairy-free.
  • 2 cups Spinach, fresh Wilts beautifully and adds nutrients.
  • 2 teaspoons Italian Seasoning Enhances the Tuscan flavor profile.

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat. Add minced garlic and diced onion, sautéing until fragrant, about 3-4 minutes.
  2. Add diced carrots and celery, stirring for another 5 minutes until they begin to soften.
Cooking
  1. Add chicken breasts and sauté until they’re golden on the outside, about 6-8 minutes.
  2. Pour in the diced tomatoes and chicken broth, then sprinkle in the Italian seasoning and red pepper flakes (if using). Bring to a simmer.
  3. Stir in the heavy cream followed by fresh spinach, allowing the spinach to wilt.
  4. Taste and adjust salt and pepper, then allow to mingle for a few minutes before serving.

Notes

Chop veggies and chicken beforehand for convenience. Use fresh herbs for a vibrant finish. Don’t overcook the chicken as it will continue cooking in residual heat.
