Main Ingredients
  • 2 pieces chicken breasts (about 200 g each) Ensure cooked through to an internal temperature of 75°C (165°F).
  • 2 packages ramen noodles (without seasoning) Instant ramen noodles can be used, discard seasoning.
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely chopped
  • 1 teaspoon red chili flakes (optional) Adjust spice level to taste.
  • ½ teaspoon paprika
  • 1 teaspoon Italian herbs
  • 100 g sun-dried tomatoes, chopped Can substitute with fresh cherry tomatoes or roasted red peppers.
  • 250 ml chicken broth
  • 200 ml cream Can be replaced with milk or a dairy-free alternative for a lighter dish.
  • 50 g grated Parmesan Additional Parmesan for garnish, if desired.
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • 1 tablespoon butter
  • Fresh basil leaves for garnish

Method
 

Preparation
  1. Season the chicken breasts with salt, pepper, paprika, and Italian herbs.
  2. Heat olive oil in a large pan over medium heat and cook the chicken breasts for 5-6 minutes on each side until golden brown. Remove them from the pan and set aside.
  3. In the same pan, melt butter and add garlic and sun-dried tomatoes. Sauté for 1-2 minutes.
  4. Add tomato paste, chicken broth, cream, and honey. Mix well.
  5. Stir in grated Parmesan until the sauce becomes creamy.
  6. Place the seared chicken back into the sauce and let it simmer on low heat for 10-12 minutes.
Cooking Ramen
  1. In a separate pot, cook the ramen noodles according to the package instructions and then drain them.
Combining and Serving
  1. Mix the cooked ramen noodles into the sauce in the pan.
  2. Serve hot, topped with fresh basil and more Parmesan if desired.

Notes

Store any leftover Marry Me Chicken Ramen in an airtight container in the refrigerator for up to 3 days. Add a splash of chicken broth or cream when reheating to restore creamy texture. You can add vegetables like spinach, mushrooms, or bell peppers for extra nutrition and flavor, or use shrimp or tofu instead of chicken.
