Method
Cooking the Chicken
- In a large, deep frying pan, heat the olive oil over medium heat.
- Carefully add the chicken pieces and a good sprinkling of black pepper.
- Cook for 5 minutes, stirring occasionally, until all sides are starting to color.
Adding Flavor
- Reduce the heat and add the garlic, sun dried tomatoes, oregano, and paprika. Stir for 3 to 5 minutes until the garlic is softened.
Cooking the Pasta
- Add the pasta and chicken stock, then stir well. Put the lid on.
- Cook for 15 to 20 minutes, stirring occasionally, until the pasta is cooked and most of the liquid has been absorbed.
Finishing Touch
- Turn the heat to the lowest setting, add the spinach and cream, and stir well for 1 to 3 minutes until the spinach is wilted and the cream is heated through.
- Check that the chicken is cooked through and add more salt and pepper if needed.
- Turn off the heat and stir in the parmesan.
Notes
Serve warm in bowls, optionally sprinkle extra parmesan cheese on top. Pairs well with a simple green salad or garlic bread.
