Marry Me Chicken Pasta

Ingredients
  

Main ingredients
  • 650 g Boneless and skinless chicken breast
  • 1 tbsp Olive oil
  • 3 cloves Garlic Fresh garlic for best flavor.
  • 170 g Sun dried tomatoes
  • 1 tsp Oregano Adjust to taste.
  • 2 tsp Paprika Can increase for more flavor.
  • 250 g Dried pasta
  • 650 ml Chicken stock
  • 150 ml Double cream
  • 50 g Parmesan For serving, can add extra on top.
  • 120 g Spinach Fresh, can substitute based on preference.
  • to taste Freshly ground black pepper

Method
 

Cooking the Chicken
  1. In a large, deep frying pan, heat the olive oil over medium heat.
  2. Carefully add the chicken pieces and a good sprinkling of black pepper.
  3. Cook for 5 minutes, stirring occasionally, until all sides are starting to color.
Adding Flavor
  1. Reduce the heat and add the garlic, sun dried tomatoes, oregano, and paprika. Stir for 3 to 5 minutes until the garlic is softened.
Cooking the Pasta
  1. Add the pasta and chicken stock, then stir well. Put the lid on.
  2. Cook for 15 to 20 minutes, stirring occasionally, until the pasta is cooked and most of the liquid has been absorbed.
Finishing Touch
  1. Turn the heat to the lowest setting, add the spinach and cream, and stir well for 1 to 3 minutes until the spinach is wilted and the cream is heated through.
  2. Check that the chicken is cooked through and add more salt and pepper if needed.
  3. Turn off the heat and stir in the parmesan.

Notes

Serve warm in bowls, optionally sprinkle extra parmesan cheese on top. Pairs well with a simple green salad or garlic bread.
