Ingredients
  

Chicken and Seasoning
  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil for cooking
  • to taste Salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
Sauce Ingredients
  • 1 cup diced tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • to taste Fresh basil for garnish

Method
 

Preparation
  1. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  2. In a large skillet, heat olive oil over medium heat.
Cooking
  1. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through.
  2. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add diced tomatoes and bring to a simmer.
  4. Stir in heavy cream and parmesan cheese until melted and well combined.
  5. Return the chicken to the skillet, spooning the sauce over the top.
  6. Cook for an additional 5 minutes.
  7. Garnish with fresh basil before serving.

Notes

To store leftovers, place the chicken and sauce in an airtight container. It can be kept in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
