  • 2 cups Cucumbers, sliced Choose firm cucumbers for the best crunch.
  • 1 cup Onions, sliced Sweet or red onions work best.
  • 1 cup Tomatoes, diced Use ripe, juicy tomatoes.
Dressing Ingredients
  • 1/4 cup Olive Oil Extra virgin preferred.
  • 1/4 cup Vinegar (white or red) Red wine vinegar adds depth.
  • 1 teaspoon Salt Sea salt recommended.
  • 1/2 teaspoon Black pepper, freshly cracked
  • 1 clove Garlic, minced Optional for added depth.
  • 2 tablespoons Herbs (basil or parsley), chopped Optional; use your favorites.

Method
 

Preparation
  1. Slice the cucumbers, onions, and tomatoes into bite-sized pieces.
  2. In a large bowl, combine the sliced cucumbers, onions, and tomatoes.
Dressing Preparation
  1. In a separate bowl, whisk together olive oil, vinegar, salt, and pepper.
  2. Optional: Add minced garlic and chopped herbs to the dressing and mix until smooth.
Combine and Marinate
  1. Pour the dressing over the veggies and gently toss to coat.
  2. Refrigerate for 30 minutes to allow flavors to marinate.

Notes

For best flavor, consume within 2-3 days. Store dressing separately if making ahead.
