Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cubed sweet potatoes with olive oil, maple syrup, salt, and cinnamon until well coated.
- Spread the sweet potatoes in a single layer on a baking sheet.
Roasting
- Roast in the preheated oven for 25-30 minutes, stirring halfway, until the sweet potatoes are tender and caramelized.
- In the last few minutes of roasting, add the chopped pecans to the baking sheet.
- Remove from oven and let cool slightly before serving.
- Garnish with fresh thyme leaves if desired.
Notes
For even cooking, cut sweet potatoes into even-sized cubes and stir halfway through roasting. Adjust maple syrup and cinnamon to taste. You may add other nuts or seeds if desired.
