  • 4 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup pecans, chopped
Garnish
  • to taste Fresh thyme leaves optional

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, maple syrup, salt, and cinnamon until well coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet.
Roasting
  1. Roast in the preheated oven for 25-30 minutes, stirring halfway, until the sweet potatoes are tender and caramelized.
  2. In the last few minutes of roasting, add the chopped pecans to the baking sheet.
  3. Remove from oven and let cool slightly before serving.
  4. Garnish with fresh thyme leaves if desired.

Notes

For even cooking, cut sweet potatoes into even-sized cubes and stir halfway through roasting. Adjust maple syrup and cinnamon to taste. You may add other nuts or seeds if desired.
