Ingredients

Main Ingredients
  • 2 pounds carrots, peeled and cut into sticks Choose fresh, vibrant carrots for the best color and flavor. Organic carrots work wonderfully too!
  • 1/4 cup maple syrup The star of the show! Use real maple syrup for an authentic taste and rich sweetness.
  • 1/4 cup brown sugar This deep sweetness adds to the caramelization; light or dark brown sugar will both do the trick.
  • 2 tablespoons butter Oh, the richness! This helps to enhance the flavors and achieve that delightful glaze.
  • to taste none salt and pepper A little pinching of these elevates all the flavors. Don’t be shy, seasoning is key!
  • as needed none fresh parsley for garnish A sprinkle of lush green parsley adds a beautiful contrast and a hint of freshness.

Method

Preparation
  1. Start by washing and peeling the carrots. Cut them into uniform sticks, about 2-3 inches long, for even cooking. Nestle the carrots in your slow cooker.
  2. In a small bowl, whisk together the maple syrup, brown sugar, butter, salt, and pepper until well combined.
  3. Pour the glaze over the carrots and gently stir to ensure every piece is coated evenly.
Cooking
  1. Cover the slow cooker and set it on low for 4-5 hours.
  2. Stir occasionally to help coat the carrots evenly and ensure no sticky bottoms.
  3. Once they are fork-tender, sprinkle freshly chopped parsley on top for a pop of color.

Notes

These glazed carrots can last in the fridge for 4-5 days in an airtight container. You can also freeze them, but be aware the texture may change slightly. Reheat in a skillet or microwave.
