Sauce
  • 3 tablespoons Maple syrup Use pure maple syrup for the best flavor.
  • 2 tablespoons Dijon mustard Feel free to experiment with styles, such as whole grain.
  • 2 tablespoons Olive oil Essential for roasting.
  • 1 teaspoon Salt To enhance the flavors.
  • ½ teaspoon Black pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and pepper.
  3. Cut the carrots and apples into even-sized 1-inch pieces.
Roasting
  1. Add the chopped carrots and apples to the bowl with the mixture, and toss everything together until coated.
  2. Spread the mixture on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through.
Serving
  1. Serve warm, optionally garnishing with fresh herbs.

Notes

Store in an airtight container for 3-5 days. Can be frozen after roasting and reheated in the oven.
