Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and pepper.
- Cut the carrots and apples into even-sized 1-inch pieces.
Roasting
- Add the chopped carrots and apples to the bowl with the mixture, and toss everything together until coated.
- Spread the mixture on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through.
Serving
- Serve warm, optionally garnishing with fresh herbs.
Notes
Store in an airtight container for 3-5 days. Can be frozen after roasting and reheated in the oven.
