  • 1 large ripe mango (or 1 cup mango nectar)
  • 2-3 pieces habanero peppers adjust based on spice preference
  • 2 tablespoons honey for sweetness and glaze
  • 1 tablespoon soy sauce for umami flavor
  • 1 tablespoon apple cider vinegar to provide acidity
  • 1 teaspoon minced garlic adds aromatic complexity
  • 1 teaspoon grated ginger for flavor enhancement
  • 2 tablespoons butter for richness
  • 2 pounds chicken wings fresh and plump
Seasoning
  • 1 teaspoon salt for seasoning
  • 1 teaspoon black pepper for flavor
  • 1 teaspoon garlic powder for base flavor
  • 1 teaspoon paprika for color and taste

Method
 

Preparation
  1. Rinse the chicken wings under cold water and pat them dry with a paper towel. Trim any extra fat or feathers, then season with salt, black pepper, garlic powder, and paprika.
  2. Let the wings rest for 30 minutes to allow the seasoning to penetrate the meat.
Make the Sauce
  1. In a blender, combine mango, chopped habanero peppers (seeded for less heat), honey, soy sauce, vinegar, garlic, and ginger. Blend until smooth.
  2. Pour the mixture into a saucepan and simmer on low heat for 5-7 minutes, stirring occasionally. Add butter at the end and let cool slightly.
Cooking
  1. Choose your cooking method: Preheat oven to 400°F (200°C) and bake the wings for 40-45 minutes, air fry at 375°F (190°C) for 20-25 minutes, or deep fry in oil at 350°F (175°C) for 8-10 minutes until crispy.
Toss and Serve
  1. Place the cooked wings in a large bowl, pour the sauce over, and toss gently until fully coated. Serve hot.

Notes

Adjust spice levels by changing the amount of habaneros. Serve with celery sticks and ranch or blue cheese for dipping.
