Preparation of Crust
- Preheat your oven to 350°F (175°C).
- Mix the crushed graham crackers and melted butter in a bowl until fully combined.
- Pour the mixture into a tart pan and press it evenly into the bottom to form your crust.
- Bake the crust for about 10 minutes or until it turns slightly golden.
- Let it cool completely.
Preparation of Mango Curd
- Whisk together sugar, lime juice, lime zest, and egg yolks in a bowl.
- Cook the mixture over low heat for about 7-10 minutes, stirring constantly until it thickens.
- Remove from heat and stir in the mango puree. Allow to cool slightly for about 5 minutes.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the slightly cooled mango curd.
- Pour the mango curd into the cooled tart shell and smooth it out with a spatula.
- Refrigerate for at least 4 hours or until set.
Notes
Serve chilled with a dusting of powdered sugar, fresh mango slices, and mint leaves. Pair it with a dollop of whipped cream and a glass of iced tea or a fruity cocktail for an elegant presentation.
