Ingredients
  

For the crust
  • 1.5 cups crushed graham crackers
  • 0.5 cups unsalted butter, melted
For the mango curd
  • 1 cups sugar
  • 0.5 cups fresh lime juice
  • 1 tsp lime zest
  • 4 large egg yolks
  • 1 cups mango puree
  • 0.25 cups heavy cream
  • 1 tsp vanilla extract

Method
 

Preparation of Crust
  1. Preheat your oven to 350°F (175°C).
  2. Mix the crushed graham crackers and melted butter in a bowl until fully combined.
  3. Pour the mixture into a tart pan and press it evenly into the bottom to form your crust.
  4. Bake the crust for about 10 minutes or until it turns slightly golden.
  5. Let it cool completely.
Preparation of Mango Curd
  1. Whisk together sugar, lime juice, lime zest, and egg yolks in a bowl.
  2. Cook the mixture over low heat for about 7-10 minutes, stirring constantly until it thickens.
  3. Remove from heat and stir in the mango puree. Allow to cool slightly for about 5 minutes.
  4. In another bowl, whip the heavy cream until soft peaks form.
  5. Gently fold the whipped cream into the slightly cooled mango curd.
  6. Pour the mango curd into the cooled tart shell and smooth it out with a spatula.
  7. Refrigerate for at least 4 hours or until set.

Notes

Serve chilled with a dusting of powdered sugar, fresh mango slices, and mint leaves. Pair it with a dollop of whipped cream and a glass of iced tea or a fruity cocktail for an elegant presentation.
