Ingredients
  

For the Meatloaf Layer
  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk for meatloaf
  • 1 tsp salt
  • 1/2 tsp pepper
For the Cheese Sauce
  • 2 tbsp butter
  • 2 cups milk for cheese sauce
  • 2 tbsp flour
  • 1/2 tsp paprika
  • 1/2 tsp dry mustard
  • 2 cups shredded cheddar cheese
Other Ingredients
  • 2 cups uncooked macaroni

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine ground beef, onion, breadcrumbs, egg, milk, salt, and pepper. Mix well and press into a greased baking dish.
Baking Meatloaf
  1. Bake the meatloaf for 20 minutes.
Cooking Macaroni
  1. While the meatloaf bakes, cook macaroni according to package directions; drain and set aside.
Making Cheese Sauce
  1. For the cheese sauce, melt butter in a saucepan over medium heat. Stir in flour and cook for one minute.
  2. Gradually whisk in milk until thickened. Season with salt, pepper, paprika, and dry mustard. Stir in shredded cheese until melted.
Combining Layers
  1. Combine cooked macaroni with the cheese sauce and pour over the meatloaf layer. Top with the remaining cheese.
Final Baking
  1. Bake for an additional 25 minutes or until bubbly.

Notes

Make sure to cook the macaroni al dente, so it doesn’t get mushy when baking. Feel free to add extra spices or herbs to the meat mixture for more flavor. You can use different types of cheese if you want to switch things up.
