Chicken Preparation
  • 4 pieces chicken breasts, boneless skinless
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 tablespoons olive oil
Coating Mixture
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese divided
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In one dish, mix the breadcrumbs, half of the grated Parmesan cheese, Italian seasoning, salt, and black pepper.
  3. In a second dish, beat together the eggs and milk.
  4. Place the flour in a third dish.
  5. Take each chicken breast and dredge it in the flour, dip it in the egg mixture, and coat it in the breadcrumb mixture.
Cooking
  1. Heat the olive oil in a skillet over medium heat. Cook the chicken for about 3-4 minutes on each side until golden brown.
  2. Transfer the browned chicken into a baking dish.
  3. In a bowl, mix the remaining Parmesan cheese with the mozzarella cheese and minced garlic. Top the cooked chicken with this cheese mixture.
  4. Bake the chicken in the preheated oven for 20-25 minutes, until fully cooked.

Notes

Use fresh ingredients for the best flavor. Adjust the seasoning to your preference; add more garlic or herbs for extra flavor. Ensure the oil is hot before adding the chicken for a good sear.
