Ingredients
  

Chicken and Coating
  • 4 pieces chicken breasts, boneless skinless
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese divided into two portions
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In one dish, mix the bread crumbs, half of the grated Parmesan cheese, and seasonings together.
  3. In another dish, beat the eggs and milk together.
  4. Put the flour in a third dish.
  5. Dredge each chicken breast in the flour first, then in the egg mixture, and finally in the breadcrumb mixture.
Cooking
  1. Heat olive oil in a skillet and cook the chicken for 3-4 minutes on each side until golden brown.
  2. Transfer the cooked chicken to a baking dish.
  3. In a bowl, mix the remaining Parmesan cheese with the mozzarella cheese and minced garlic.
  4. Top the chicken with the cheese mixture.
  5. Bake in the oven for 20-25 minutes until the chicken is fully cooked.

Notes

Serve the Parmesan chicken hot. It pairs well with pasta, salad, or steamed vegetables. Optionally, add marinara sauce for extra flavor. For extra crunch, mix crushed cornflakes into the breadcrumb mixture. To keep chicken juicy, avoid overcooking it in the skillet. You can also experiment with different cheese types.
