  • 1 package frozen tater tots
  • 1 pound breakfast sausage Cooked and crumbled
  • 1 cup bell peppers, diced
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice) For topping
  • Salt and pepper To taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage over medium heat until browned and crumbly. Drain any excess grease.
  3. In a large bowl, whisk together eggs and milk, then season with salt and pepper.
  4. In a greased 9x13 inch baking dish, layer half of the tater tots on the bottom.
  5. Spread the cooked sausage and diced bell peppers evenly over the tater tots.
  6. Pour the egg mixture over the sausage and peppers, and top with the remaining tater tots.
  7. Sprinkle cheese on top.
Baking
  1. Bake in the preheated oven for 40-45 minutes, or until the egg is set and the top is golden brown.
  2. Let cool for a few minutes before serving.

Notes

Serve warm, cut into squares. Goes well with fresh fruit or salad. Consider adding hot sauce or sour cream for extra flavor. Ensure greasing of the baking dish to prevent sticking.
