  • 4 large potatoes, peeled and diced Choose starchy potatoes like Russets for a creamier texture.
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth For a vegetarian version, replace with vegetable broth.
  • 1 cup heavy cream Can substitute with whole milk or half-and-half for a lighter version.
  • 1 cup shredded cheese (cheddar or your choice) Feel free to use any cheese you like.
  • 6 slices crispy bacon, chopped Omit for a vegetarian version.
  • Salt and pepper to taste Taste and adjust seasoning before serving.
  • Green onions for garnish Optional garnish.

Preparation
  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  3. Use a potato masher to mash some of the potatoes for a creamy texture.
  4. Stir in the heavy cream and cheese until well combined.
  5. Add crispy bacon and season with salt and pepper.
  6. Serve hot, garnished with green onions.

Notes

You can make the soup a day ahead to allow the flavors to blend. If you want a thicker soup, you can blend a portion of it and mix it back in. Serve with additional toppings like more bacon, cheese, or a dollop of sour cream, and pair it with a slice of crusty bread or a fresh salad for a complete meal.
