Ingredients
  

For the Cake
  • 2 cups Ricotta cheese Use fresh ricotta for the best texture.
  • 1 cup Granulated sugar Adjust to taste.
  • 1/2 cup Limoncello For a more intense flavor, add more.
  • 2 large Eggs Room temperature for better mixing.
  • 1/2 cup All-purpose flour Sift before measuring.
  • 1 tbsp Baking powder Ensure it's fresh for proper rising.
  • 1/4 tsp Salt Enhances the flavors.
For Garnish
  • 1 lemon Thinly sliced For decoration.
  • 1 cup Powdered sugar For dusting on top.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, combine ricotta, sugar, and limoncello. Mix until smooth.
  3. Add eggs to the mixture one at a time, beating well after each addition.
  4. In a separate bowl, combine flour, baking powder, and salt. Gradually add to the wet mixture.
Baking
  1. Pour the batter into the prepared pan and smooth the top.
  2. Bake for 60 minutes or until a toothpick inserted comes out clean.
  3. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Garnishing
  1. Once cooled, dust the cake with powdered sugar and decorate with lemon slices.

Notes

This cake is best served chilled. For added flavor, you can soak the cake in additional limoncello after baking.
